One Pan Lemon Chicken and Couscous.
This incredible lemon and chicken couscous can be made in one pan. It’s super fresh and delicious, while cozy and comforting at the same time. Tender chicken thighs over lemony couscous with lots of herbs. We love it!

This lemon chicken and couscous is an easy one pot dish, with tender chicken thighs, lemony couscous and tons of fresh herbs. It’s light and satisfying and tastes amazing.
Ah, how I ADORE a lemon chicken dish.
One pot meals with couscous or rice or orzo are so easy and satisfying. I love having the method on hand for busy weeknights because the dish comes together quick. And it’s always a crowd pleaser.
This is how I make it!
I love to use chicken thighs for this recipe. Boneless, skinless chicken thighs are Eddie’s favorite. And they have tons of flavor, stay super juicy and cook up nicely in the pan. So the first order of business is to brown the chicken thighs on both sides.
Once the chicken thighs are crispy and golden in color, I remove them from the pan. I stir in some diced shallots and garlic and they pick up all those brown bits in the bottom of the pan. That right there is FLAVOR.
Once the veggies have softened, in goes the couscous. I toast it for a few minutes and then stir in some chicken stock.
Next, the chicken thighs go back in! Nestle them into the couscous and stock. Add some lemon slices if you wish. And cover the pan!
This dish cooks in about 15 minutes, as long as the pan stays covered. You can lift the lid and give it a light stir if needed, but it usually doesn’t require it. The couscous gets plump and flavorful, the chicken cooks through and it smells like HEAVEN.
Finally, lots of fresh herbs for the top. When the chicken is done and you’re ready to serve it, top it with lots of fresh parsley, chives and even cilantro.
We LOVE this dish. It’s very cozy and comforting, much like a saucy rice dish or even a thicker soup. But at the same time, it tastes very light and fresh. It’s so bright from all the lemon.
Of course, the leftovers are great too! And it’s an easy dish to meal prep since it happens all in one pan. That’s the best ever.

One Pan Lemon Chicken and Couscous
Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- kosher salt and pepper
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- 2 teaspoons fresh lemon zest
- 1 tablespoons olive oil
- 2 tablespoon unsalted butter
- 1 shallot, diced
- 3 garlic cloves, minced
- 1 ½ cups dried pearl couscous
- 2 ¼ cups chicken stock
- 1 lemon, thinly sliced
- ¼ cup fresh herbs, like parsley, chives and cilantro
Instructions
- Season the chicken all over liberally with salt and pepper. Stir together the garlic powder, paprika, oregano and 1 teaspoon lemon zest. Sprinkle it all over the chicken.
- Heat the olive oil in a 12-inch skillet or dutch oven over medium heat. Add the chicken and brown on both sides, about 2 to 3 minutes per side. Transfer the chicken to a plate.
- Add the butter to the skillet. Stir in the shallots and garlic with a pinch of salt. Cook for 5 minutes. Stir in the couscous and remaining teaspoon of lemon zest. Cook for another 3 to 5 minutes, stirring as the couscous toasts.
- Pour in the chicken stock. Add the chicken thighs back to the pan too, nestling them in with the couscous. Add some lemon slices if desired.
- Cover the pan and cook for 15 minutes.
- Remove the lid and fluff the couscous a bit. Top with a bunch of fresh herbs and serve.

Such a cozy meal! This recipe was delicious and easy to follow. Next time we might try adding some capers for a nod to chicken piccata. This will definitely be going in our dinner rotation!

Easy to make. I added some oven roasted grape tomatoes
So good!! This is an amazing weeknight meal as it tastes like hours of prep went into preparing the dish, but really the whole thing comes together in less than an hour with prepping, cooking and clean-up. The chicken is juicy and the couscous has a velvety texture to it.
We paired with roasted broccoli to add a veg, and topped with a bit of shredded parm cheese. We will definitely be incorporating this meal into our midweek meal rotation!
