This black bean chicken chili is so comforting and delicious. It’s filled with shredded chicken, fire roasted tomatoes, tons of tender black beans and diced green chiles. Topped with cheese, scallions, sour cream and chives, it’s the most wonderful fall meal.

This might be one of my favorite soup recipes EVER. Between my tortellini chicken soup and this chicken chili, I am going chicken soup crazy.

Feels like it’s the 90s and I’m making the same few meals over and over. Worth it. Plus, it gives my kids a vehicle for consuming one of their favorite snacks: tortilla chips.
Crush some tortilla chips over this and everyone is thrilled.
We’ve been having the rainest weather which is very much welcome over here. It didn’t rain all summer, so to have it rain for over a week straight feels like a luxury, as well as a good reason to enjoy some cozy, comfort food.
We haven’t hit cold temps yet, but as soon as we do, soups on every night!
This chicken chili is a take on one I have made for almost 15 years now and it is SO SO good. It’s hearty and soul warming, without being heavy. It’s super satisfying and tastes wonderful with an excellent base of flavor.
It can come together super fast if you use a rotisserie chicken or any kind of leftover shredded chicken. The rest of the ingredients are easy to grab, like:
Fire roasted tomatoes
Diced green chiles
Black beans
Smoked paprika
Sour cream
And all the toppings!!
The toppings make this, of course. And on the side, I like to serve the most incredible cornbread that I’ll tell you about later this week. It’s dreamy!

Black Bean Chicken Chili
Black Bean Chicken Chili
Ingredients
- 1 tablespoon olive oil
- 1 sweet onion, diced
- 4 garlic cloves minced
- kosher salt and pepper
- 2 cups cooked, shredded chicken
- 2 teaspoons cumin
- 2 teaspoons smoked paprika
- 1 teaspoon chili powder
- 4 to 5 cups chicken stock
- 1 (28 ounce) can fire roasted crushed tomatoes
- 2 (14 ounce) cans black beans, drained and rinsed
- 2 (4 ounce) cans diced green chiles
- ½ cup sour cream
for topping
Instructions
- Heat the olive oil in a pot over medium-low heat. Add the onions, garlic and a big pinch of salt and pepper. Cook, stirring often, until the onions soften, about 5 minutes.
- Add in the chicken, cumin, smoked paprika and garlic powder. Stir and cook for another 2 to 3 minutes.
- Add in the stock, crushed tomatoes, black beans and diced green chiles. Bring the mixture to a boil, then reduce to a simmer. Cover and simmer for 15 to 20 minutes.
- Stir in the sour cream. Stir until it all melts in. Taste and season with more salt and pepper if needed.
- Serve with cheddar cheese, tortilla chips, cilantro, green onions and more sour cream.

hi…the recipe states 1 tsp garlic powder and 4 cloves of garlic…wondering if it’s supposed to be 1 tsp. chili powder and 4 cloves of garlic

very easy and tasty recipe. But mine came out quite soupy without that thick chili texture I love. I used less than the called-for amount of stock, but still had to cook it down quite a bit to get it to thicken.
