Oh how I love a breakfast cookie!
These apple butter breakfast cookies are incredibly satisfying and so delicious, perfect to make for the week ahead. Nothing like a good breakfast meal prep to get the week started off right!
Never did I ever need an excuse to have a cookie for breakfast. But this is a good one.
A good excuse that is. And a good cookie.
Breakfast cookies can be tricky!
It’s hard to find one that doesn’t taste like cardboard. It’s difficult to make one that is actually worthy of the cookie name. There are breakfast “cookies” that are just mounds of oats and bananas smashed together and labeled “cookie.” It’s blasphemous!
I have a few recipes that I really enjoy, but this new one might be my favorite. Think melty almond butter, oats, grated apples, chopped walnuts, maple syrup – dreamy!
These are so crunchy and the texture is perfect. The flavor is even better. They are hearty and filling and taste like a spiced fall day.
These breakfast cookies kind of remind me of my granola scones. It’s not like they are a chewy gooey cookie. It’s a fairly healthy recipe after all. But they aren’t dry either! They are crumbly and crunchy without falling apart. They are nourishing without being heavy or super sugar laden.
I am probably making no sense, but they are worthy of the breakfast cookie name.
And the fall flavor!
Apple butter, maple syrup, grated apple, cinnamon… oh it is so good. I LOVE the flavor of these. They remind me of the apples and cinnamon instant oatmeal packets I adored when I was a kid.
These come together so easily. Just like a basic cookie. Scoop, bake, eat. They freeze well. A batch will last all week.
The ideal meal prep.

Apple Butter Oatmeal Breakfast Cookies
Apple Butter Oatmeal Breakfast Cookies
Ingredients
- 1 ¾ oats
- 1 cup all-purpose flour
- ⅓ cup ground flaxseed
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon kosher salt
- 1 large egg egg
- ½ cup apple butter
- ½ cup creamy almond butter
- 2 teaspoons vanilla extract
- 1 tablespoon maple syrup
- 1 medium apple grated, about ⅔ cup
- ⅔ cup chopped walnuts
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a bowl, stir together the oats, flour, flaxseed, baking soda, cinnamon and salt.
- In a large bowl, whisk together the egg and apple butter. Whisk in the almond butter, vanilla extract and maple syrup. Add the dry ingredients and grated apple. Add the walnuts. Stir until everything is just combined.
- Scoop the dough onto a baking sheet - I do about 1 ½ inch scoops and set them 2 inches apart. You can use the bottom a glass to gently press on each scoop to flatten the cookie, otherwise they will be a little mound of cookie.
- Bake for 10 to 12 minutes, or until the cookie is set. Let cool completely. Store sealed for up to 5 days. These are also great served with extra apple butter!

If I don’t have apple butter, would you suggest replacing with regular butter or increasing the peanut butter to 1 cup instead?
Apple butter’s closest replacement will be thick apple sauce/puree.
Apple butter is essentially concentrated applesauce. Apple butter is when the apples are very finely chopped or pureed, and are cooked for a longer period of time, which thickens the product.
The recipe’s water, fat and stickiness content would be dramatically altered if you used butter or nut butter instead.
To the writer you have a pleasant sense of humor. To the recipe creator if they are not the same…..if I am going to make something healthy for breakfast and meal prep it, the nutrition facts per serving are essential to me actually going from reading it to cooking it. Since this name is healthy sounding and the insinuation in the writing is that it is a healthy “cookie breakfast” I really need nutrition breakdowns.
Including nutrition breakdown is such a tricky thing. Nutrition info varies depending on the brand of almond butter or apple butter, in this instance, that is used. If you need specific nutrition, it’s better to put your ingredients into an online calculator or app to get a more accurate macro count.
Sorry. Needs more sweetener and taste and I don’t mind things that aren’t that sweet. With all those ingredients, it’s hard to imagine it could be that bland.
I’m super excited to make this recipe for my family! Can the ground flaxseed be omitted though?
Thanks for this recipe. I don’t have apples, but I’m going to try to make it this morning anyway, using a banana. Or maybe I’ll go to the store first if I can’t think of a better sub. But I’m definitely going to try it!
I have been looking for a healthy and delicious granola like bar. This is the one!! They are so moist and yummy. I am so happy that I found this recipe. I brought some to an outing and my friends loved them. Especially from my diabetic Friends. They all want the recipe!
My breakfast cookies ended up a little dry. I wonder if it was a mistake to squeeze all the water out of the grated apple. Should I leave that water in?
