Pretzel Crusted Buffalo Chicken Bites.
These buffalo chicken bites are coated in crunchy pretzels before baking and then slathered with tangy and spicy buffalo wing sauce. Serve with the most delicious cilantro ranch that is creamy and refreshing!

Oooooh these little buffalo chicken bites are everything you want and more. Baked until crunchy with the pretzel crust. Brushed with tangy wing sauce and coated in a shower or fresh chives and herbs.
Oh!! And dipped in cilantro ranch for the good measure. The absolute best.
I have more chicken finger recipes than I can count, but these little bites are the best. I basically take my pretzel crusted chicken fingers and drench them in wing sauce. How could things go wrong?!

My little chicken fingers and nuggets have been so popular because they are crunchy and flavorful. For years, I’ve used the wire rack trick so I can bake the chicken and still get that excellent texture without sacrificing flavor too!
These are excellent even if you want to make them alone or serve them with just the ranch.
Speaking of the the ranch! This is my favorite ranch dressing that I make at home, with a cilantro boost. There’s a bunch of cilantro blended into this one because it goes SO well with buffalo chicken.
It makes for the perfect dip and can be used with veggies, spread on sandwiches and more.
These little bites are amazing for dinner or an appetizer, a party or even a late night snack. They’re better than a frozen variety you can grab and you can customize them to your preferences!

Pretzel Crusted Buffalo Chicken Bites
Ingredients
- 1 ½ pounds boneless, skinless chicken breasts
- kosher salt and pepper
- 2 cups mini pretzel twists crushed
- 1 teaspoon garlic powder
- 2 eggs lightly beaten
- ¾ cup buffalo wing sauce
- 2 tablespoons unsalted butter
- chives, for topping
- fresh cilantro, for topping

- 1 cup plain greek yogurt or sour cream
- ½ cup mayonnaise
- ½ cup milk
- ⅓ cup chopped fresh cilantro
- 3 tablespoons fresh chives or 1 tablespoon dried chives
- 2 tablespoons fresh dill or 2 teaspoons dried dill weed
- 2 teaspoons fresh lemon juice
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- kosher salt and pepper
Instructions
- Cut the chicken into 1 to 2-inch cubes (or all roughly the same size)
- Preheat the oven to 425 degrees F. Line a baking sheet with foil and place a wire rack on top. Spray the rack with nonstick spray.
- Season the chicken pieces all over with salt and pepper. Place the pretzels in a food processor and blend until mostly fine crumbs remain. Place the pretzels in a bowl. Stir in the garlic powder.
- In another bowl, lightly beat the eggs.
- Take each chicken piece and coat it in the beaten egg. Dredge it through the pretzel crumbs, pressing gently so the crumbs adhere. Place the chicken on the rack and repeat with remaining chicken. Once all the chicken is finished, spray it with avocado or olive oil spray.
- Bake the chicken for 12 minutes. Flip it gently and spray the other side with the oil spray. Bake for another 10 to 12 minutes.
- While the chicken is baking, heat the wing sauce and butter in a saucepan until combined. As soon as the chicken is done, brush the sauce all over the chicken bites. Top with chives and cilantro.
- Serve with the cilantro ranch!

- Add all ingredients to a blender or food processor and blend until pureed and combined. Store in the fridge in a sealed container. This lasts for about a week!
